I've seen this word used so many ways I didn't even really know what it means anymore! My teacher told me its almost like Sharing but I've seen it used in so many ways where a translation like sharing wouldn't make sense, to me anyway.

Does anyone have a few examples for me so I can see the ways in which it is used?

I would use roinnt for some, a few, a bit of, a portion, a share of.

yes 'roinnt' means 'some' or a share of something.

'roinnt' also means the division or distribution of something.

eg. roinnt cártaí means dealing cards
it could also mean some cards

these are the two main meanings as far as I understand.

roinn - verb
roinnim - i divide
ag roinnt - dividing

Ar mhaith leat roinnt cáca? = Would you like some cake?
but
Ar mhaith leat braon bainne? = Would you like some/a drop of milk? (braon for liquids is the way I understand it).

Errigal once pointed out to me that 'Go raibh maith agat gach duine' was Béarlachas and that 'Go raibh maith agat uilig' or 'Go raibh maith agat go léir' was better. I appreciate someone pointing things like that out to me. That comment seems relevant to your finish too.
