I wonder if it is simply because it's a common Irish name. (Although probably not as common as it used to be). Like Jane or John is used in English.
An anglicization of it is used as a offensive word for a Catholic in the North.

My "specialty" is Connemara Irish, particularly Cois Fhairrge dialect, but I can also speak Ulster and Munster Irish with native-level pronunciation.

I've seen Tadhg in other books as well, even books set centuries apart. I think there is only two possible explanations:

(a) Tadhg can be in several places at once and is immortal. This is probably what's going on, since we already know
Tadhg hangs out at the market and the street.

(b) There are several people called Tadhg. Not likely since I've never seen a picture of two Tadhgs in the
same place at the same time.

It's also an anagram of "a ghad" the vocative of willow twig! Coincidence?
